Sal Buonacore had always dreamed of owning his own restaurant. What he did not know, was that dream would eventually become a reality. With the loving support from his wife of 21 years, Tricia, and his three children, Marley, Camryn, and Vincent, Sal took the leap from an employee in banking to a small business owner in the food industry. On June 29th, 2018, Sal became the owner of Paul’s Diner, which is located at 6 Carlisle Road, Westford, MA, and the family couldn’t be happier.

On November 1st, Sal will be releasing the new and improved Paul’s Diner menu. It will feature new items in honor of each of his family members. The Salvatore omelet, Tricia’s Monte Cristo French toast, Marley’s BBQ Club sandwich, the Cammy sandwich, and the Vinny Ray breakfast sandwich.  Other items on his menu are in honor of some of Paul’s Diner’s employees and its regulars. It’s truly a small town, family and friend-based diner.

We met with Sal and asked him a few questions about the diner, and of course food! Below is what he had to say. 

What makes Paul’s diner different than every other diner/what can people expect when they come? 

Paul’s Diner is one of the only family-run diners I know that combines everything you would want in an eating establishment.  We provide large size portions, and quality ingredients with a wide variety of options for breakfast and lunch.  We also offer catering services (with delivery) and a function room for any special events you may be hosting. Our service is quick, and our staff is extremely friendly.  The atmosphere is comfortable and fun.

What’s your favorite item on the menu for breakfast and lunch?

One of the slight changes we made to the menu already was changing our steak and eggs to marinated steak tips and eggs.  The marinade was created by one of our own cooks, and customers are really enjoying them.  On the lunch side, our sandwiches are huge and filled with quality ingredients.  Sounds funny to say, but they are really “hand crafted” and made to order.  I guess you will have to come in and try both to see for yourself.

What is your favorite part about owning a restaurant?

Everybody has at least one passion.  For me, I have multiple including sports, music, and of course, food.  Since I was a kid, I watched relatives own and manage Italian restaurants and pizzerias in NY on Long Island.  I always wanted to follow in their footsteps but never had the chance until now.  I guess the favorite part for me is living my passion every single day and then in turn watching our customers enjoy the food and service we provide.  Seeing customers come back day after day means we are doing something right, since there are so many options for them nowadays.

How has Huntington Tax helped you?

Huntington Tax has helped me tremendously along the way.  I can’t say enough about the services they have provided me.  When you think of accountants you think of filing tax returns, at least that’s what I used to think of.  But Huntington Tax is so much more.  From the time I decided I wanted to buy the Diner, through the purchase and sale and up until the closing.  The best part about them is that they do not wait for you to ask questions and favors of them, they bring concerns to your attention ahead of time and are very proactive.  They take care of things for you that you would never think enter the realm of what an accounting firm should do.  I do not consider them my accountant, I consider them my partner.  So much so that they have a waffle on the new menu.  It is called the Good Will Huntington.  I am so much better off with them on my side.

Make sure you go visit Paul’s Diner the next time you are in the area or even make a special trip. You won’t be disappointed. Paul’s is open Monday – Friday 6:30am – 1:30pm, and Saturday and Sunday 7am – 1pm.
